Princeton – Routine inspection conducted on 04/04/2024:

Priority items:

  1. Raw meat stored above ready-to-eat (RTE) foods in fridge. Raw meats should be stored below RTE foods to prevent contamination.
  2. RTE potentially hazardous foods (PHFs) in ziplock bags not dated. RTE PHFs should be dated to prevent spoilage.

Core items:

  1. Blood from raw meat and food residue accumulating in fridge. Non-food contact surfaces and equipment should be kept free of accumulation of dust, dirt, food residue, and other debris.
  2. Personal food stored in fridge with food establishment food. Personal food should not be stored in the same fridge as establishment food to prevent contamination.

Discussed rationale for PHF and RTE food storage. Discussed date marking and use of freezing. Discussed process of breading and contamination prevention.
